Review and Giveaway: Tropical Traditions Coconut Flour



I may be a kitchen enigma but while I could do without cooking, I actually do enjoy baking. Of course, who doesn't love some warm, straight-out-of-the-oven goodies? I can always count on Tropical Traditions to add a delicious, seasonal flair to my baked goods. From their virgin coconut oil and coconut cream concentrate to their coconut flakes and organic raw honey, I'm always impressed with the quality and taste of their products. So, naturally, I was excited to try out their Organic Coconut Flour.

Tropical Traditions Organic Coconut Flour is derived from the fiber of the coconut meat after most of the oil has been extracted to make Virgin Coconut Oil. It is certified organic, gluten-free, unsweetened and untreated. It is high in dietary fiber and protein, making it a great substitute for traditional grains or wheat-based recipes. And because is contains natural sugar from the coconut meat, you'll need less sugar added to your recipes!

After perusing a number of recipes, I decided to make some fruit-filled muffins as a breakfast treat for Nate and I.

Gluten Free Strawberry Coconut Muffins

Servings: 6-12 muffins
Preparation: 10 minutes

  • 1/2 cup coconut flour
  • 1/2 tsp Himalayan salt
  • 1/2 tsp baking soda
  • 6 eggs
  • 1/3 cup raw honey
  • 1/3 cup coconut oil
  • 1 tsp vanilla extract
  • 1 cup strawberries, fresh or frozen, chopped
Preheat oven to 350 degrees F.

In a small bowl, combine coconut flour, salt and baking soda.

In a large bowl mix the eggs, honey, coconut oil and vanilla until well blended. Mix dry ingredients into the wet, blending with a hand mixer or by hand. Gently fold in strawberries.

Place batter in paper lined muffin tins and pour batter in about 1/2 - 3/4 full.

Bake in preheated oven for 20-25 minutes. Take them out and let them cool and serve topped with Strawberry Cream Cheese (optional).

These muffins were mmm...mmm...good! Spongy texture and just a very mild coconut flavor, which accented the strawberry beautifully. They were awfully pretty to look at too:



Even Nate gobbled them up and we know how picky he can be!


I didn't have the ingredients for it on hand but their optional cream cheese topping sounds fab. I'll definitely have to give that a go next time!

Cream Cheese Topping
  • 1 cup homemade or store bought cream cheese, softened
  • 1 cup chopped strawberries, fresh or frozen
  • 1 - 3 tbsp raw honey, to taste

Place everything in a blender or food processor and blend till smooth. Store in an airtight container in the fridge. When muffins are ready, generously top each muffin and enjoy!

I bet they'd also taste great with some lightly toasted coconut flakes on top or even a warm honey glaze. *drool*

I can't wait to do more baking with my Organic Coconut Flour. I think I may attempt the Grapefruit Pound Cake or Lime in the Coconut Cookies. (Can you tell I'm on a fruit kick?) I love that it is versatile, gluten-free and all-natural. I may even use it to thicken up my smoothies.

Review and Giveaway: Pop Pals

Ah, sweet summertime. The season for one of our favorite family treats: popsicles. I can always count on a good 'ole freezie pop to cool me off on a hot day. Unfortunately, if I give Nate one for himself, it results in a bright, sticky mess all over the place and almost always requires a bath. I had restricted them to stripped-down, outdoor use only until I discovered Pop Pals from Keen Distribution.

Nate normally drops his ice pop if I hand it to him straight out of the freezer so have to let it sit out for a few minutes to warm up. But then it begins to melt and sweat, making it easy for my clumsy toddler to squeeze and spill. Gone are the days of stalking him with a paper towel because Pop Pals are the ideal solution! I still had to assist Nate a little with them as he couldn't quite maneuver it all by himself. But the size and shape were perfect for a small grip and we only had two tiny drips as opposed to a giant mess of sticky goo. I was so confident in our Pop Pals that I even let Nate eat his freezie pop in our carpeted living room! And no, I didn't regret it later! The floor stayed clean and so did his clothes.



Pop Pals would even work well with Pedialyte Pops for times when your child is sick. The last thing you want to deal with on top of an illness is sticky hands and blankets!

Bottom line: If your kids are fans of Flavor-Ice but you could do without the clean-up, you want to pick up some Pop Pals! I love that they are safe and I don't have to be a mean mama by withholding messy, albeit yummy, treats.

Review: Silikids Siliglass

My little boy is growing up. It seems like just yesterday he was transitioning from breast to sippy (he never was one for bottles with those pesky artificial nipples). And now he's beginning to show interest in drinking from an open, "big kid" cup. Now I don't want to discourage Nate from exhibiting his independence, but at the same time I can just envision his chubby little butter fingers losing their grip and the sound of glass shattering all over our floor. So, for safety reasons - and let's face it, a desire for less mess -we almost always offer a sippy cup instead. Thankfully, Silikids has the perfect drinkware solution for us.

We had the opportunity to review the Siliglass, a 6 oz. child-size cup made from 100% food grade silicone. The external Siliskin protects against slipping, prevents breakage of the glass inside and is non-porous so it can't harbor bacteria. Because silicone is extremely heat-resistant, it is dishwasher-safe and can also be boiled to sterilize. The Siliglass is available in four fun colors: aqua, lime, red and purple.



The Siliglass is now Nate's favorite cup. Whenever he sees it sitting in our drying rack, he reaches for it and begs for a drink. And instead of hesitating, I happily oblige him. Why? The bumps on the Siliskin make it easy for Nate to grip the glass. It's super soft and comfy to the touch. And while we haven't yet had any accidental drops (I couldn't bear to do it on purpose!), I know that if it should happen, it is highly unlikely to break. I'm pleasantly surprised by how well Nate drinks from his Siliglass. He hardly ever spills liquid out of it. I am one proud mama!




I like that the Siliglass is completely safe and easy to clean. Just throw it in the top rack of the dishwasher and call it a day! Getting the sleeve back on the glass is a bit tricky but with some practice, it gets easier. I find pulling the skin back and rolling it back over the glass is the fastest method. Of course, because there is no lid to the Siliglass, it is not really suitable for travel. But it is our go-to cup at mealtimes when Nate is seated and can be supervised.

Bottom line: If your toddler or preschooler is growing beyond the sippy cup stage, the Siliglass is the safest - and most stylish - next step. I personally can't wait for the 11 oz. Siliglass to come out later this year so I can have one too!

Review and Giveaway: Eco Vessel CLOSED

Nate is getting older and more and more "boy". Rough. Tough. Dirt magnet. He's super active so he needs to stay hydrated. But the vast majority of the sippy cups we own leak with just the slightest jostle. This is not only wasteful but creates more of a mess than I need. I already spend enough time cleaning up after my toddler tornado! We need a sippy cup that is durable enough to withstand toddler abuse yet is also eco-friendly so there's less mommy guilt for me.

Eco Vessel marries durability and style for a darn near perfect sippy. Based in Boulder, Colorado, Eco Vessel is dedicated to their slogan, "live clean & be green". Their line of single-wall, insulated and filtered stainless steel water bottles for adults and children aim to make their plastic counterparts obsolete. Their 100% recyclable, BPA-free bottles are made of high quality, non-leaching materials and are designed for safety and convenience.

I was fortunate enough to review an Eco Vessel 8 oz. stainless steel sippy cup. This cup is insulated with food grade #304, 18/8 steel to keep drinks cold. It is ergonomically shaped for small hands, is lightweight and BPA-free. It also comes with a clear cap for easy travel.

Right away, I recognized the Avent valve and spout. I had never tried this system before but I don't know how I lived without it for so long! Many cups claim to be leak-proof but fall way short after one reassembly. Not this one! Our Eco Vessel hasn't leaked on us once in the two weeks we've had it. It does have six parts in all (spout, lid, valve, handles, cup and cap) which can be a little cumbersome to keep track of but since it works like a charm, I can't complain.

The stainless steel construction not only looks cool but can weather any amount of tosses or tumbles. Unlike other plastic versions, I know we'll have this cup around for years to come. It keeps his drinks cold for hours, even in triple digit weather. The handles make it easy to carry around and the flow seems to satisfy Nate. We have a winner!



The only real disadvantage to the Eco Vessel cup is the price. At $14.95, it's a bit pricey for a sippy cup. However, considering how much I've spent on subpar cups, I would have saved money if I had just gotten this one first and foremost. I also wish there was a clear window or another way to see how much liquid is left in the cup but that isn't a dealbreaker for me.

Bottom line: If you want a truly leak-free, sustainable cup that will also be the talk of the playground, Eco Vessel is it.

Review: Little Grips Toddler Utensils

Mealtime can be a frustratingly messy experience as toddlers learn how to properly feed themselves. I remember stripping Nate down to his diaper since he appeared to get more food on him than actually in him. At nearly 2 years old, I sometimes still use this strategy! There's a reason there are splat mats on the market, although it never fails that food particles will find their way just off the mat into impossible crevices. Between spills, drops and throws, I cringe when I think of the aftermath that I'll have to clean.

I'm all for anything that can help make mealtime easier, which is exactly why Little Grips are a lifesaver.

With lots and lots of practice, Nate has grown quite adept with regular utensils so he was a little confused at first when given Little Grips. However, it didn't take long for him to figure it out. The shape of the handle allows him to stab and scoop better than with other brands. And while he had one teeny tiny drip onto his clothes, he stayed relatively clean and dry with his lunch. I just wish we had Little Grips months ago when we were first transitioning from fingers to utensils. I could have spared my back and knees from all that scrubbing - and my laundry loads would have been a little lighter too!



Bottom line: Little Grips are a mommy must-have for any child 9 months or older who is learning or perfecting the art of self-feeding. Even childcare providers and grandparents should have a set!

Review and Giveaway: Tropical Traditions Coconut Flakes CLOSED



I've had the pleasure of working with Tropical Traditions for a number of reviews. Every single thing I've tried has tasted fabulous, from virgin coconut oil and coconut cream concentrate to coconut peanut butter and organic raw honey. So, when they invited me to test another one of their products, I couldn't resist.

Tropical Traditions Dried Coconut is 100% natural, made from organic coconuts in the Philippines that are grown with no fertilizers or pesticides. This premium dried coconut contains no additives, preservatives or sweeteners. Unlike most dried coconut on the market, Tropical Traditions does not treat their products with sulfites to keep them white. You're getting pure coconut and only pure coconut!

Tropical Traditions offers three varieties of dried coconut: shredded coconut, coconut flakes and coconut chips. The shredded coconut is cut very small, making it perfect for baking things like macaroons. The coconut flakes are cut a bit larger, making them perfect for garnishes or toppings. Coconut Chips are the largest cut and can be used as a snack food or mixed with nuts and other dried fruits for trail mix. I had been dying to make a homemade coconut cream pie so I decided to go for the coconut flakes.

Sure enough, I found a great Coconut Cream Pie recipe on their site. However, instead of baking the crust from scratch, I settled for a ready-made graham cracker one.

Coconut Cream Pie

Ingredients:
1/2 cup whole sugar
1/4 cup cornstarch
1 tablespoon vanilla extract
1 cup shredded coconut or coconut flakes
1 tablespoon butter
2-1/2 cups heavy cream
3 tablespoons Coconut Cream Concentrate

Topping:
Whipped cream (optional)
Toasted coconut flakes (optional)

Combine sugar, cornstarch, and shredded coconut together in a pot and slowly pour the heavy cream into the pot over medium heat. Add vanilla, butter and coconut cream concentrate while stirring with a wire whisk constantly. Bring mixture to a simmer and reduce heat to medium low. Continue stirring until mixture becomes very thick and turn the heat down to low. Cool the mixture in the pot with a cover for about 5 minutes. Pour mixture into cooled pie crust and place wax paper on the top of the pie to prevent skin formation on the filling. Wait until the filling is completely cool. Top pie with whipped cream and garnish with toasted coconut flakes (optional). Refrigerate until ready to serve.


Oh my goodness...this pie was simply heavenly! Plus, with my modification, it was no-bake so it was incredibly easy. It was so creamy and delicious. As a matter of fact, I think I preferred it to the store-bought ones!

To toast the coconut flakes, you can either spread them evenly on a baking sheet and bake at 300 degrees for 15-20 minutes until golden brown or you can use a skillet stove-top on medium low heat. I used the latter method (as it was faster) and they turned out perfectly.



The only thing I noticed is you'll want to let the pie set in the refrigerator overnight, or at least a few hours. I was too impatient and tried to cut through it after I thought it had cooled enough and it crumbled apart so much I had to use a spoon and scoop it out into a bowl. Oops! Still delicious even if the presentation was not so pretty.

These coconut flakes make a perfect summer topping to just about anything from muffins to salad to pasta. Next, I can't wait to try the Vanilla-Flecked Coconut Macaroons and the Strawberry Cream Pie. My mouth is watering at the very thought.

Review and Giveaway: Brugo Mug CLOSED



I love coffee. I live for coffee. My morning just isn't complete without a hot cup of java. But there's just one teensy problem. I can't drink it fresh out of the pot or else it burns my lips and tongue. I have to pour it and wait patiently for it to cool off. Where has this been all my life?! Brugo is my new compadre! How could I not love a cup that gives me options to fit my every mood? I can sip it leisurely at home or quickly on the go so it truly can adapt to any lifestyle.

The first thing I noticed was the generous 16 oz. size. On average, I drink two cups of coffee per day, so this was perfect for me. Review and Giveaway: Truvia Natural Sweetener CLOSED



It's fast approaching summertime, which means lots of barbecues and dining alfresco with yummy treats like fruit salad, coleslaw, and key lime pie. I know you won't catch me without a glass of lemonade or sweet tea in my hand. Most of the summer refreshments I love contain a bit (or a lot) of sugar. And while I love me some sweets, I don't love the effect on my diet. I alternate between raw sugar and Splenda, but I'm always leary of something created in a lab.

Well, now I can enjoy my goodies without the worry, thanks to Truvia.

Truvia (Tru-VEE-a) is a new, natural zero-calorie sweetener derived from the leaves of the stevia plant. Stevia was discovered in Paraguay over 200 years ago and has been used as a sweetener in various parts of the world for more than three decades. What makes Truvia different from other brands of stevia is its purification process. The leaves are harvested and dried, then steeped in water - similar to making tea. This unlocks the best-tasting part of the leaf, rebiana. Rebiana is then combined with erythritol (sugar alcohol found in natural fruits like grapes and melons) and natural flavors to form Truvia natural sweetener.

Truvia comes in a familiar crystallized form so it can be used easily in your favorite beverages or recipes. One packet is equivalent to two teaspoons of sugar so there is plenty of sweetness in that small package. And because it has no effect on the glycemic index, Truvia is safe for people with diabetes or insulin resistance. It has been rigorously evaluated and has been definitively established as a safe, general-purpose sweetener by the FDA and World Health Organization.

I first tasted Truvia when I reviewed Breyers YoCrunch 100 Calorie Packs, but I had never tried it on its own. I was delighted when I was offered a box of Truvia packets to review.



I love the way it tastes in my coffee and tea. It has a crisp, clean, sweet flavor with no funky aftertaste or side effects like aspartame (which gives me headaches). I think Truvia is a bit sweeter than its artificial counterparts, which tickles my taste buds. It also tastes great sprinkled on grapefruit or over oatmeal.

I perused the Truvia website and found a list of delicious recipes from celebrity chef Sam Talbot. After much debate, I finally decided on the Chocolate Crepes for a decadent morning meal.

Chocolate Crepes
Yields: 16 servings

Ingredients

1-1/2 cups all-purpose flour
12 packets Truvia natural sweetener
1/8 tsp salt
2-1/4 cups skim milk
2 tbsp unsalted butter, melted
2 large eggs
2 tbsp cocoa powder
1/2 tsp vanilla extract
non-stick cooking spray

Directions

1. Assemble all ingredients.
2. In a large bowl combine flour, Truvia and salt.
3. Add milk, melted butter, eggs, cocoa powder and vanilla; whisk mixture until very smooth.
4. Place batter in fridge for one hour to allow flour to absorb liquid.
5. Place skillet or crepe pan over medium heat; heat until hot.
6. Spray pan with non-stick cooking spray.
7. Pour 1/4 cup batter in pan and swirl to form thin layer.
8. Cook for about 1 minute or until golden brown on the bottom, flip and cook other side for 30 seconds.
9. Place cooked crêpe on a towel; cool for about 2 minutes.
10. Stack crêpes with wax paper between each layer to prevent sticking.

Serving Suggestion

Place several rows of fresh or frozen raspberries, strawberries, banana slices or a fruit sauce down the center of the crêpe and fold it up. Top with light whipped topping and dust with cocoa powder to garnish.

I've never been great at making crepes (you have to be so precise!) but these turned out wonderfully! The taste reminded me of Cocoa Pebbles cereal. I used blackberry preserves and sprinkled half a packet of Truvia on top to serve, as that was all I had on hand. But I plan to make them again with strawberries and cream cheese or with caramelized bananas and whipped cream. Mmmm!



This Blueberry Mojito recipe sounds like a winner too! I like that they offer a sweetness conversion chart so you know just how much Truvia to substitute for sugar.

Bottom line: Order that dessert and hold the guilt. Truvia tastes great, won't wreck your diet, and won't ruin your appetite as you wonder exactly what you're ingesting.

Review: Sugar Free Ring Pop



I've always been a sucker for candy (pun intended). But over the years, I've had to give up most of my favorites because the sugar content is high enough to rot my teeth on the spot. Well now I can indulge in a childhood classic without all the guilt.

What little girl (or guy!) didn't adorn her finger with a jeweled Ring Pop back in the 80's? Well, the best-selling Topps candy is back and better than ever with a sugar-free version! Sugar-Free Ring Pops are sweetened with Splenda, are fat and cholesterol-free and only 30 calories per pop. And each bag offers three yummy flavors: Strawberry, Watermelon and Blue Raspberry.

We were lucky enough to try out the new sugar-free flavors and while it has been a long, long time since I last had a Ring Pop, I must say these tasted just as fruity and delicious as I remember! There was no aftertaste as with some artificial sweeteners. If I hadn't known ahead of time that these were sugar-free, I don't think I could have ever guessed it. My husband favored the Watermelon and I was partial to Strawberry but all of the flavors were great. Nate is still too young for hard candy so he didn't get to participate in this review. But when he's a little older, I wouldn't hesitate to let him try one on occasionally.

I love Ring Pops in particular because they last forever (it took me almost an hour to lick mine down to the plastic core) and the design is not only cute but makes it easy to carry without dropping. They're perfect for parties or long car rides. They also make great bribes rewards for extra-good behavior.

Review and Giveaway: Peter Rabbit Organics CLOSED






I love fruit. Bananas. Apples. Oranges. Pears. Peaches. Mango. Kiwi. Strawberries. Blackberries. I pretty much love them all. Naturally, I assumed my son would inherit my fruity love but alas, he is uninterested. Unless of course, it is part of a cocktail drowned in sugary syrup. Not so good. I wanted to find a fun, healthy way to make fruits irresistible to Nate. And Peter Rabbit Organics does just that.

Peter Rabbit Organics, named for the beloved literary character, has one simple mission: to provide healthy, organic snacks for all to enjoy. Their squeezable organic fruit pouches were such a hit in their home country of the U.K, that they had to bring it overseas into the U.S. Their fruit snacks contain 100% organic fruit with no added sugar and nothing artificial. They list every ingredient, so there are no undeclared colors, flavors or preservatives. Peter Rabbit Organics sources only USDA-certified organic ingredients and, whenever possible, they use local suppliers in Oregon. All pouches are BPA-free to keep the contents fresh and free of leaching contaminants. They currently offer three delicious flavors: Apple and Grape, Strawberry and Banana, and Mango, Banana and Orange.














Peter Rabbit Organics was kind enough to send me a sample of each flavor to review. We actually stuck them in Nate's Easter basket in lieu of candy! As soon as I saw the ingredients listed on the back, I knew this was going to be good:



No added salt. No added sugar. Not even water. Just fruit! And I could even see the proportions of each variety, so I knew exactly what my child was eating.

I love that they use a familiar character to promote a new concept. We have several Peter Rabbit books so Nate could recognize the bunny in the blue jacket right away. The design of the pouches is perfect for children like Nate who are particular about textures. Because he can't see what's inside, he is more inclined to try it without being turned off initially by the look or consistency.

Even though he could grasp it himself, I knew a full, squeezable pouch could spell disaster for my mess-making toddler. So, I turned it into a game, where he would say "aah" and I would squeeze it on his tongue for him. Once the pouch was halfway empty, and the likelihood of a giant pureed mess was lower, I allowed him to handle it himself.

I was shocked to see him gobble it up! He seriously couldn't get enough. He was even tilting it upside down to suck the last few drops out of the pouch. Not a bit to be spared. (Shh! Nobody tell him it's fruit!):



And can you believe that none of it made it's way onto his clothes or the floor? That in itself is a miracle!

The Strawberry and Banana flavor was his favorite, although the Mango, Banana and Orange flavor was a close second. He didn't care for the Apple and Grape flavor, but then again he's not too fond of apples in general, so I know it's just his inner food critic. I tasted it and thought it was quite yummy! What does he know? *wink*

I love that the pouches are easy to store or throw in a diaper or lunch bag for convenient travel. No worries about spoons or spills. I also love the choke-free caps, which won't pose a hazard to my baby. Not only can you eat the fruit straight from the pouch, but you could also mix it in cereal, oatmeal or yogurt. Each 3.5 oz. pouch is one serving of fruit so I feel good offering this as an alternative to the usual Cheerios or crackers. And if your little one doesn't finish off the pouch, you can refrigerate it for up to 48 hours after opening. No waste, no fuss!

The only disadvantage I could find with this product is the price. At around $1.50/pouch, this can really add up for a one-income family. So, we will only be able to buy these sparingly. I'd also like to see a few more flavors, like Pear, Melon or a Mixed Berry (Blueberry/Blackberry/Raspberry).

Bottom line: Who says rabbits only like carrots? For a healthy, natural, convenient fruit snack, Peter Rabbit Organics is an ideal choice for adults and children of all ages.

Review and Giveaway: Tropical Traditions Organic Raw Honey CLOSED



I've reviewed several organic goodies on behalf of Tropical Traditions and I'm back again - this time with something extra sweet.

Tropical Traditions is known for its coconut products but did you know they are the exclusive source of premium organic honey in the U.S.? Tropical Traditions' Organic Raw Honey comes from frontier areas of Canada and is only harvested during a 6-week period in the summer.

Most commercial honeys come from bee farms, where the bees are controlled within a certain area and get their pollen from only one kind of flower. Many of the plants that produce these flowers are grown with pesticides and fertilizers. The honey is also pasteurized in high heat and filtered, removing many beneficial nutrients and enzymes. Tropical Traditions must adhere to a rigorous set of standards to ensure they are USDA-certified organic. Their beehives are placed in isolated areas, miles from dense population, industry, traffic, landfills, and fields treated with chemicals. They rely on the bee's natural instinct to stay within a natural four-mile range from the hive. All aspects of the honey production including the source of the nectar, forage area of the bees, management of the bees, extracting process, transportation, “lot” management, processing temperature, integrity (no co-mingling with non-organic honey), screening, and, packaging materials, are taken into account in the certification process.

Tropical Traditions Organic Raw Honey is not subjected to the heat of processing - only warmed enough to flow at the same temperature the honey would see inside the hive. Their premium honey is pure, smooth and creamy with the consistency of soft margarine. It contains live yeast and enzymes because it has not been processed. It also contains pollen because it has been screened but not filtered.

Tropical Traditions kindly sent me a jar of their organic honey to review.

I should say that I use honey regularly as a natural sweetener in favor of sugar. I've used it in baked goods, spreads, smoothies, tea, coffee, etc. I've tried lots of different varieties and I can safely say Tropical Traditions is hands down the best! Unlike the faux caramel color of traditional honey, this was a thick, opaque shade of white. I personally found the creamy texture more palatable than any others I have tried. The taste is simply superb. Heavenly. I have to just close my eyes and say "mmmmm" with every bite. It's that good.

One of the first things I made was a honey-butter glaze for crescent rounds. I just mixed Tropical Traditions Raw Honey with a small pat of butter to taste, heated in the microwave for 10 seconds and drizzled over the rolls just as they exited the oven. Divine! Even my husband went back for more.




After perusing some recipes on the Tropical Traditions website, I came across this no-bake coconut candy recipe that I just had to try:

Vanilla Coconut Cream Candy

Prep Time: 5 minutes
Servings: 30 pieces (about 1/2 inch thick)
  • 16 oz Coconut Cream Concentrate
  • 1/4 to 1/3 cup raw honey
  • 1 teaspoon vanilla extract
  • 2/3 cup raw or toasted walnuts (chopped)

Slightly warm the coconut cream concentrate over a bowl or pan of hot water until it can be stirred. Stir in the honey, vanilla and chopped nuts into the coconut cream concentrate until well mixed. Before it hardens, shape mixture into rolls and wrap in waxed paper. Let harden in the refrigerator and slice into rounds to eat as candy once firm. Store in refrigerator or at room temperature if below 75 degrees.

This was so tasty and so easy to make! I halved the recipe and it only took about 10-15 minutes total, so it would be perfect to whip up for unexpected company. This candy is very rich - think fudge - so you can only eat one or two pieces at a time. But it sure is yummy! Only three simple steps:

1. Mix all the ingredients in a bowl



2. Roll mixture into wax paper and let sit in refrigerator until hard (about 10 minutes)



3. Slice and enjoy!



Next, I want to try a homemade honey mustard sauce/dip for chicken, a honey-apricot glaze for ham and honey vanilla poached pear. It's extremely versatile and I can't wait to indulge in more deliciousness.

Bottom line: Go against the grain(y) - Tropical Traditions' Organic Raw Honey is a smooth, delicious alternative to those colored packets. You really can't go wrong with anything from this company!
